Doesn’t this look fun? It’s a vacuum coffee contraption that Grace and I tried out in a cafe in Canterbury. After a brief safety talk (water is hot, metal is hot, glass can explode and cut you) we watched in delight as the science set to work and the water bubbled and steamed, pumping through the coffee and then back into a little dispenser with a tap. The coffee was smooth and sweet and all the more magical for the interactive brewing experience.
