Jubilee Cake

We got into the Jubilee mood a little early this evening with some celebratory gin cocktails and a patriotic Union Jack cake. There may or may not have also been some Royal Family masks.

Cream together 8 oz butter and 8 oz caster sugar. Add a couple of drops of vanilla essence. Mix in 4 eggs, then slowly stir in 8 oz self-raising flour, a little at a time. Once it’s all combined, spoon the mixture into two lined, greased tins. Bake in a 180C preheated oven for 20 minutes, or until the cake is golden brown on top, comes away at the edges of the tin, and a knife comes out clean when inserted into the centre. Leave to cool, then sandwich the two cakes together with jam, ice with buttercream (cream together 2 oz butter with 4 oz icing sugar and a drop of vanilla essence), and arrange strawberries and blueberries on top. Serve with gin on the rocks (or a cup of tea). Yes ma’am.
